This is my adaptation of a recipe I sampled at the Whole Foods Market in Mt. Pleasant.
Blueberry Goat Cheese Salad:
- Fresh local blueberries
- Mixed greens
- Grape tomatoes, halved
- Walnuts
- Thinly sliced Shallots
- Goat Cheese crumbles
Dressing:
Mix champagne vinegar (or balsamic if you don’t have that), with olive oil, the juice of half a lemon, and honey.
Toss the salad ingredients (except for the cheese) with the dressing. You don’t want a ton of greens– the majority of the salad should be tomatoes and blueberries and walnuts, Put on plates and top with the goat cheese crumbles. It’s the best salad I have had in a long time!
