Oyster Stew

Oyster stew is a remarkably simple stew, which is great as a first course, or served with a green salad and crusty bread as a meal.
- 8 or so local, Bull’s Bay oysters per serving
- enough heavy cream to fill the bowl, per serving
- 1.5 tbs butter per serving
- 1 shallot
- salt
- pepper
- cayenne
- fresh parsley
Shuck the oysters over a bowl, and reserve the liquid that comes out. Melt butter in a pan. Chop and saute the shallot. Add the cream and the oyster liquid, and simmer, reducing until it is thickened somewhat (oyster stew is not supposed to be a very thick soup at all). Add the oysters and simmer for a minute or two (you don’t want to overcook them). Season with salt, pepper, and a dash of cayenne, and serve. Quick, easy, and good!
