Easy Orange Cream Pie

I really like this pie.
- 1 graham cracker crust, baked
- 1 pkg. cream cheese (8 oz.), softened
- 1 can mandarin oranges, drained really well
- 1.5 cup (approx) whipping cream
- approx. 2/3 c sugar, or to taste
- 1 tsp grated orange peel
Using an electric mixer, mix the cream cheese with the sugar. Then beat the whipping cream until it becomes whipped cream. Fold the whipping cream into the cream cheese mixture to lighten it up. Then fold in the mandarin oranges and the orange zest. Fold gently, and only until just combined. Then scrape it all into the prepared (baked and cooled) pie crust. Refrigerate for about an hour. Serve cold. It’s really good.
