Onion Tartletts

This is an excellent  and very easy appetizer.  If you have company coming, you can prepare the filling ahead of time and just fill and bake when you are ready to.  I’ve never tried to freeze these, but I bet you could.  

Thai Coconut Soup

(serves 4)

3 1/2 cups coconut milk
1 cup water
1 pound chicken breasts (cut into 2 inch pieces)
1/2 pound fresh mushrooms, halved

Bacon Broiled Clam Appetizer

Clams- littleneck or top neck
Raw bacon, cut into about 5 pieces per strip (want 1 piece per clam)

Irish Beer Bread

3 cups self rising flour
3 tbs. sugar
1– 12 oz. can of beer (any kind)

Prepare pan– grease either 1 large loaf pan or 2 small ones.  Mix flour and sugar together.  Add beer and mix.  Do not over mix!

1 tbs olive oil
1 tbs butter
4 green onions, sliced
1 minced clove garlic
1 rib celery, sliced
2 c chicken broth
1 can (14.5 oz.) diced tomatoes, undrained

Tomato Pie: A Lowcountry Favorite

There are tons of different ways to make tomato pie, but I prefer a simple, eggless version.Ingredients:
